Witlof garden salad

Witlof is related to radicchio, and has similar crisp leaves, tightly packed and white in colour, with pale green tips.
- ½ head green leaf lettuce, leaves torn
- ½ head red leaf lettuce, leaves torn
- 1 red witlof, leaves separated
- 1 white witlof, leaves separated
- 1 Lebanese cucumber, cut in half and thinly sliced
- 6 radishes, thinly sliced
- 50g walnuts, toasted
Dressing
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- 1 teaspoon Dijon mustard
- ½ teaspoon caster sugar
Layer the lettuce and witlof on a platter and scatter cucumber and radishes on top. Whisk the dressing ingredients in a small bowl and season with salt and pepper. Drizzle over the salad and sprinkle with walnuts. Serve with turkey and pickled peaches.
