Fig, blue cheese and hazelnut salad

Make the most of a backyard bounty of fresh figs with this delectable summer recipe from The Diggers Club.
Ingredients
- 10 x fresh figs, halved
- 3 x tbsp. honey
- 150g blue cheese
- 100g toasted hazelnuts, peeled and coarsely chopped
- 100g fresh roquette
- Salt and pepper
- Olive oil
Method
Preheat the oven to 180° degrees
Place the figs on a baking tray
Drizzle the honey over the figs
Place into the oven for 3 to 4 minutes
In a large bowl place the roquette, hazelnuts, olive oil, salt and pepper
Remove the figs from the oven and add to the bowl and add the juices in the baking tray to the bowl also
Place the salad in a serving bowl or platter and crumble the blue cheese over and serve.
